a very simple and tasty recipe I translated by Yuko Ito of the Japan Living Food Association

Ingredients:

  • 4 bananas
  • 1 cup dates, pre-soaked if necessary
  • 1 cup raw almonds
  • a cup coconut powder or flakes

Directions:

Process the almonds down in a processor or blender under you get at least a rough powder. If using coconut flakes you can powder them down, too. Set aside. Blend the banana and dates together in a food processor. Start with the dates if they are tougher, but watch that they don’t bog down your blender. Mix everything together with a spoon. Spoon onto dehydrator tray and dehydrate until you reach desired consistency. You can also make think cracker squares that you splice before dehydrating. If you don’t have a dehydrator, just make cookie shapes and chill for a chewy “uncooked” cookie. It all tastes good!
